Love it! Got yelled at in the comments in my last video that I missed the head meat haha. I use the guillotine trick when I am going to grill them whole, but tried to filet them with no head before and it was a MAJOR PITA. That's because I tried to go in from the head like you would do a normal filet, I like your trick to start at the back and get that initial cut, will use that on our next ones! Tight lines Reed!

I do mine similarly, but I don't take the filets off of them. I smoke or grill them whole in grill baskets, sans heads. Heads baked in the oven or used for fish stock.

ОтветитьThis is one of my favorite fish to cook. I keep the head on, open the belly and remove all the insides all the way up to the head. Then I season the inside of rhe fish and dress it with olive oil. After that I score the outside of the filets in a cross pattern and stuff seasoning into the meat and then rub the whole fish down with olive oil and seasoning. Then I crank my cast iron and sear the two sides. Then ill throw some butter, Rosemary, a thyme in the skillet and baste the fish like a steak. Then I remove the herbs and throw the skillet in the oven until its cooked through to my liking. Its a wonderful fish!
