ОтветитьSo glad to see Farideh again! This is a killer recipe. Simple high-hydration dough, but that wash is new to me. For sure going to steal this. I’ve got cold-proof dough in the fridge now ready to go for pizza night but at least one of those boules is turning into Barbari Bread.

Made this a few days ago, it's already a huge favorite around here!
fwiw I made with 00 flour as I didn't have AP, still turned out even better than I imagined. A Turkish friend was in heaven, apparently they have a similar take on bread called Ramadan pide.
I also wished the recipe had grams instead of tsp but whatever, if anything that captures the casual intent of the author/recipe, which I appreciate. Thank you! 🙏
Fresh barbari out the oven with feta cheese, herbs and walnuts is an undefeated Persian breakfast
