ОтветитьNot bad ... he made a quicker version. There's another guy that brined the chicken for 2 days before marinating I think. That slower recipe probably more flavorful tho. But Gordon's is quicker and simpler to do in the house.

ОтветитьHis spices are not right. The allspice is the star of this dish. This is not authentic jerk. Not even close. Maybe Americanized version. Where are the green onions? This must be Gordon’s version. When made correctly their will be a thick dark sauce left in the pan to pour over rice. Don’t skip on the sweet plantains .

ОтветитьI'm sorry original jerk is done on the grill over charcoal, slow cooked, with love not in oven. I'm sorry, love you my mentor, but that is baked chicken with hot rub. But I would assume coming from your hands it should taste great! Try it on the charcoal grill next time.

ОтветитьAt least Scotch Bonnet pepper was used instead of Jamie Oliver’s “Jalapeño Jerk Rice”, and dark meat instead of boring chicken breast. This is a decent adaptation for people who don’t have a charcoal grill or access to Pimento woods for the authentic Jerk flavour.
