Tempered Chocolate, snap, gloss, no melt on your hands

how would you make sugar free chocolate candy with nuts with your favorite sweeter? low carb please.

Hello - I understand everything you are telling us about the preparation of the chocolate and it all makes sense, except the stainless steel part. If what you are saying is fact, why is it fudge is best made in copper pots? I have my father-in-laws' fudge pot and I watch fudge being made at various tourist attractions, such as Union Station in St. Louis, MO USA. Is it two different things altogether?
