ОтветитьClarified butter is NOT Ghee, Ghee is when you burn of the milk resideu and Clarified is just boiled and skimmed off the top. Ask an Indian...Ghee is harder to achieve than Clarified, as you have only seconds in which to achieve a clear unsullied butter, which is brillint for high heats and the taste is nutty & lovely.

ОтветитьDoes the baking soda work with eggs that have not been washed and are just a day or two out of the hen? The rule of thumb for fresh eggs is that if you don't wash them, you can keep them on the counter, fyi. Also, fresh, washed eggs need to be stored in the fridge for at least 3 weeks before they will peel well after boiling.

ОтветитьDid you know, if you cook your eggs in steam (which is hotter than boiling water) then this brings the cooking time of soft boiled down to 4min and hard boiled to 8min - saving energy and thus money. Simply add only a centimeter in hight of water, place the eggs inside (punched) and time from when the water cooks. I do this with hot water from the water cooker, which also saves energy and/or gas in my case :-) because the water sort of boils immediately. Also, the eggs need to be warm i.e. not directly from the fridge. I take them out the night before. I am egg crazy, every (really every!) morning 2 or 3 soft boiled eggs and a cosy breakfast table with tea candles and green decoration. Highlight of the day :-)

Ответить(Before starting I would like to say if you stir your eggs a few times while you're cooking, the egg yolk will stay in the middle of the egg instead of to one side makes a beautiful egg for ramen or deviled eggs). Add one teaspoon of baking soda and 1 tbsp of vinegar to seal cracks in eggs while also making them easy to peel.
Add cold water to the eggs and bring them to a boil remove them off the burner place a cover and let set, for a gooey egg yolk 4 minutes, for a medium egg 7 minutes, and for a fully cooked yolk 12 minutes, remove them from the pan (if they are really fresh eggs at this point sometimes I will crack the egg shells) next place them in ice water for 5 minutes before peeling. This will make the eggs perfect without the green ring and keep the egg yolks beautiful and soft.
When making omelets adding a teaspoon of vinegar into the eggs will make them fluffier and brighten the color as well as flavor.
When beating eggs for a meringue or a whipped cream add 1 tsp of cream of tartar to egg whites.

Here are my tips for peeling hb eggs.
Use eggs that are not super fresh.
Simmer for 12 mins, then put in ice bath for five mins (at least).
Grab a small jar (like for jam or mustard), place one egg at a time in the jar, cover with the lid, and shake vigorously 12-16 times. The shell should slide right off, often in large pieces.
If you drop a raw egg on the floor (and don’t have a dog), pour salt on the egg. It will coagulate the egg, making it easier to scoop up.
Do not crack an egg directly into whatever you’re making, like cake batter. Instead, crack each egg separately into a ramekin, then add to batter. That way, if you get a bad egg, or pieces of shell fall in, you won’t ruin whatever is already in the large bowl, like the batter.
if you want a fluffy omelette then whisk eggs hard add a pinch of boiled water keep whisking and add to hot pan immediately.

ОтветитьEgg producers in the States have up to 30 days to package eggs after they are laid. Then, after packing, they can be sold up to 30 days later. So, the "secret code" is not a very reliable metric for determining the freshness of eggs. If an egg was packed on November 4, 2024, it could have been laid as early as October 5 and sold as late as December 4. You have no way of knowing how long the eggs have waited. The code is there for the egg farmers, not the consumer. I would not say it is more reliable than the expiration date.

ОтветитьGreat content. But you missed the one thing I’ve wanted to know for years. I have zero problem separating yolks from whites. But how do you separate the thick white from the thin white? Look at fried eggs in egg commercials or in photos. How do you do that?
ОтветитьI save my egg shells, rinse them well, then bake them in my toaster oven at about 150C/300F for about 15 minutes (I save them up until I’m using the oven for something else). This dries them and sterilizes them. I then crush them up in a mortar and pestle, and add about a teaspoon of crushed shell in with the coffee grounds in my coffee maker, plus about a half teaspoon of sea salt. This helps smooth out excessive acidity in the coffee, greatly improves the taste of the less expensive coffee I buy, and maybe adds a teeny bit of calcium in my diet. The used grounds then get added to my compost, so the eggshell still winds up in my garden.
