A) Chicken Marination :
----750 Gram Chiciken ----
-----1/2 Cup Dahi------
-----15-20 Black Pepper-----
----3 Green Cardamom-----
----1 Star Anise -----
----1 Badi Elaichi----
----2-3 Cinnamon Pieces----
-----1 Small Mace----
----6-7 Cloves----
----1 Bay leaf----
----1/2 TBSP Red Chili Powder----
----1 TSP Haldi----
----1/2 TBSP Coriander Powder----
----1 Tsp Cumin Powder----
----Salt to taste----
----1 TSP Garam Masala----
-----1 TBSP Ginger Garlic Chili Paste------
----2-3 Green Chilies----
----Chopped Coriander Leaves----
----Mint Leaves----
----Handful of Fried Onions----
----1/3 Cup Oil----
----Marinate Overnight----

B) Placing Marinated Chicken into Handi :
----IN HANDI OR ANY HEAVY BOTTOM PAN, PLACE MARINATED CHICKEN ON THE BOTTOM----
---- ADJUST THE CHICKEN PEICES BY PLACING LARGE ONES IN THE MIDDLE----
----MAKE SURE ALL THE PIECES TOUCH THE BOTTOM AND MAKE SINGLE UNIFORM LAYER ----

Layer with -
----Fried Onions----
----Coriander Leaves----
----Mint Leaves-----


C) Rice Preparation :
----1 LITRE WATER----
----1 TSP CUMIN SEEDS----
----3 CINNAMON STICKS ----
----3 GREEN CARDAMOM----
----4-5 BLACK PEPPER----
----6-7 CLOVES----
----SALT TO TASTE----
----1 TBSP BUTTER----
----LET IT BOIL----
----ADD SOAKED RICE----
----BOIL TILL RICE IS 70% COOKED----
----1 TBSP BUTTER----


E) Soak Rice :
----ADD 1 Litre Water-----
----2 Cups Rice-----
---Soak For 20 Mins-----


D) Layering :
----LAYER THIS PARBOILED OVER THE CHICKEN-----
----RICE MUST BE MOIST AND NOT WITH DRIPPING WATER----
----KESAR WATER MIXTURE------
----1 TBSP GHEE----
---- FRIED ONIONS-------
-----CORIANDER LEAVES---
----1/2 TSP GARAM MASALA------
----1/4 Cup Milk-----

----Cook For about 5 mins On High Flame------
----Then Cook For about 15 mins On Low Flame----
----Heat Tawa
Place Handi on Heated Tawa & Cook on Low Flame for 15 mins----
