October is here and I´m here from my cosy home and days full of baking and creating something cute!

Recipe - Apple Buns
(my form is 25 x 17 cm and I made 10 pieces)
but it´s so good that you will need double amount! promise! :-)

250 g four
125 ml milk (but add fistly 100 ml and then you can add more)
50 g butter
30 g sugar
15 g of fresh yeast (or 7 g dry yeast) - I´ve been using dry yeast
1 egg yolk
pinch of salt

Prepare sifted flour into the bowl, make a small dent and add yeast into that dent, add tea spoon of sugar and 3 tea spoons of milk (milk should be room temperature or warm little bit)
Let it at least 10 minutes rise... but dry yeast usually need 20 minutes

Then add the rest of ingredients (slowly with milk) and knead the dough.
Put the dough into a bowl, cover it with cloth and put it into warmer place. After 45 minutes start knead the dough little bit and then again, put it into the bowl, cover with cloth and let it rise another 45 minutes. (It can happen that the dough will need more time to rise... it depends on the yeas sometimes)

Filling - Apple Apricot Fresh Jam
4 apples, apricot jam, sugar, some sweet alcohol (rum type), lemon juice, starch

Chopp apples, put them into the pot, add lemon juice, tea spoon of sugar, alcohol and let it simmer under the lid. Once apples are soft, add apricot jam (few spoons - it´s instead of sugar) and then add tea spoon of starch disolved in little bit of water... and that´s it.

Cut out 8 or 10 pieces from the dough, put the filling inside, make bund and add them into a form which is wiped with oil. Wipe even the buns with oil, it will be easier to separate them form each other once they are baked...
Baking on 170 degrees (340 F) slowly until golden. When they start to be gold, spred a bit of butter on buns and let them bake another five minutes.
