They dont know i know that sleeping gives you hp and he sleeps the most

But if you think about it sans I constantly sleeping which as we can see throughout the game lets you go above the maximum so how much extra Hp does he have is the really question.

File stats are non canon. Asgore, Mettaton Neo, Toriel, and most of the genocide bosses have different file stats for gameplay or story reasons. Toriel and Asgore are holding back and the genocide bosses have lower stats so you can one shot them.

Another theory:
So, in game, you can go above your Max health by sleeping. What do we see Sans doing all the time? So, sure, his Max HP is 1, but his HP at any given time could be much higher
