I have to disagree with Valerie Gordon regarding the milk chocolate Motto used in his campfire bread pudding. I understand what she’s saying about using a bittersweet chocolate to “give a little more complexity to the flavor” of the dessert, but not everyone likes bittersweet chocolate, no matter how high-quality the chocolate is. To me, bittersweet chocolate darkens the flavor of whatever it’s in, so I won’t choose anything with it. I usually agree with the guest chefs/judges’ critiques during these challenges, but I think they sometime forget to consider that potential customers may have different individual preferences.

Chef Ramsay acting like a souffle is a necessity in any restaurant. I've never gone to a restaurant with a souffle on the menu. Guess I don't go to bougie enough places.
