Paula Deen's inspired fried chicken! We just had to try the queen of southern cooking's inspired recipe! Hot Sauce is the secret ingredient! You can't even taste the hot sauce either. It was one of the best fried chicken I have had in years! It's easy, nothing hard about this recipe at all. It is hands down delicious!
4 eggs
1⁄3 cup water
1 cup hot red pepper sauce (does not make chicken spicy) We used Franks hot sauce
2 cups self rising flour
1 tsp pepper
2 1⁄2 lbs chicken, cut into pieces
2 quarts vegetable oil
P.D. house seasoning- Makes quite a bit, it last 6 months.
1cup salt
1⁄4 cup black pepper
1⁄4 cup garlic powder
Sis had bought P.D. seasoning from Savannah. So we used that.
Mix seasoning together and store in airtight container for up to 6 months.
In medium bowl, beat eggs with water. Add enough hot sauce so mixture is bright orange.
In another bowl, combine flour and pepper. Season chicken with house seasoning. You can let the chicken sit in hot sauce for up to 1 hour. It will not make the chicken spicy.
Remove pieces of chicken from liquid dredge and coat each piece well with flour mix.
Heat oil to 300 degrees in dutch oven or cast iron skillet. Don't fill pot more than half full of oil.
Fry chicken in oil until brown and crispy. Dark meat goes in first and takes 13-14 minutes (7-8 mins on each side). White meat takes 8-10 minutes (about 5-7 mins on each side). Be careful not to burn the chicken, we actually had to lower our heat from medium high to medium because it was cooking hot and fast.
Remove chicken pieces from skillet when internal temp 165 degrees and chicken is golden brown.
Place on a papertowel lined platter or tray and serve immediately warm and delicious y'all!
