ОтветитьI'm a novice. I made the Sweet Potato and Banana Glutinous Rice Flour Cake based on your video and my family loved the cake. However, I needed to deviate from the recipe by having to add an additional 5.5 oz of glutinous rice flour. Here is what happened. After I peeled off a ping-pong ball sized dough from the original dough, cooked the ping-pong ball sized dough in boiling water and then added it back to the original dough, I found the dough to be wet and non-dough like and very sticky, to the point that I can't knead the dough at all, other than using a bamboo spatula to stir the dough. I kept adding more flour until I was able to knead it with my hand. So, the resultant cake is not as sweet as the original recipe since I doubled the flour usage. The yield doubled though, from ~ 6 to 10 cakes. My question is: What is the reason for peeling off a ping-pong ball sized dough, cook it in boiling water, and then add it back into the main dough? The dough without boiling the ping-pong ball sized dough seems to look and feel fine.
