You're fearless, Max😂😂 taking on the origins of Texas chili. Here's a fact for ya: in Wisconsin, noodles go in the chili. Elbow macaroni, broken spaghetti noodles or egg noodles. It isn't eaten without them, I found out moving here over 30 years ago. Fightin' words, noodles, I know, but it's true.

My father's family was from Mexico, but we are in California. TexMex food is a style all its own. It is very good, but different from Mexican food in Mexico.
Chili powder is an American invention. Mexican recipes usually used tried chilies which are soaked and ground after they are soaked. Chili Powder has added spices.

I came up with a recipe that is very simple, and whoever tastes my chili thinks it is great. Here it is: 500g minced meat (ground beef) into a deep skillet and brown, Add 400g tomato sauce (Tomato Frito). Then add 800g of pinto beans and 80g of kidney beans, 2 tsp of chili powder and 1-2 tsp of cayenne pepper and let slowly simmer for 2 hours, stirring occasionally. I cook mine in an InstantPot and let it slow cook for about 6 hours. About 1/2 hour before done, add 1/2 tsp of cinnamon and stir. The longer you let it sit the better it will taste. I put the leftovers in the fridge and reheat it the next day.

Mexican-American war of 1846 through 1848. many MANY irish immigrants went to fight Mexico. The kicker is... the Irish became pretty upset and disgusted that they were shooting Catholics. They switched sides. There was some german or irish food in Mexican dishes. On top of there being beautiful latinas, great food, music, and over all good climate year round. you'd stay in Mexico. Same goes for Norsemen staying in lombardy, italy and parts of italy. they stayed for same reason.

Hey Max. I'm a Texan. I'm not here to argue about beans in your stew or whatever. I just want to recommend you use chiles instead of chili powder. That's what the chili queens did.

Casa Rio in San Antonio used to post their recipe on their web site. I have a copy of you want to try it. It's the best.

I was born in San Antonio,Tx so I can tell you that being a Texan, I have had some good chili and also THE BEST Mexican food there ever was. From Dallas,Tx to Brownsville,Tx and many parts in between, I've sampled some of the best. I just wanted to say that many years ago I found an Award Winning Chili recipe and it actually used 3 brands of chili powder. One was Gerhardt's, another Mexene, the 3rd ???, and I have misplaced that recipe, so I don't have the full ingredients list anymore, but it was so good. So don't limit yourself to only one name brand when making your own chili version at home. Also, I think they served the beans on the side which allowed you to add then to the chili as you were eating it, much like when you're served tortilla soup and you add rice to it from your side of rice.

Maybe one day I will find that exact recipe once again. Loved hearing the history of my hometown and this program about the 3 Chili Queens, it is a story I remember hearing long ago.❤😊

I disagree that it needs to be beef. I use ground turkey in my chili and I make sure to season it well and brown it with the onions and garlic before adding it to my chili and it tastes fantastic. It’s also healthier than red meat.

I love chilli con carne so much, I literally meal prepped 2 weeks worth of it. I used to eat it everyday for a year. one of my top 5 for sure.

This was one of my Nanas' staple dishes and one of my very favorite. The chile con Carne with homemade flour tortillas. I'm glad you enjoyed it, and thank you for the history.

As a kid in the 1960's & '70's, we always had a couple of cans of Gephardt Chili con Carne in the pantry. It was my favorite. I haven't seen it since. I guess the local grocery stores switched to Hormel or some other more generic chili?

Cincinnati chili is not a version of Texian chili con carne. It is a product of Greek immigrants making makaronia me kima in Greek diners in Cincinnati with local ingredients; Having to substitute ground beef and ground pork for minced lamb and having to substitute sharp cheddar for Kefalograviera sheep cheese. Cincinnati chili is and has always been a pasta sauce.

The original chili with chunks of meat sounds delicious & I'm going to try to make it! The only chili I really liked was in Texas & they were militant. But, I'm not fond of lose ground beef, so not my thing. But all chili beef "stew" has me really excited.

I made Chef Billy Parisi’s Texas chili yesterday. It took a while to source the proper ingredients and I spent $60 in total. It was awful and destroyed my kitchen!
I love his bolognese recipe, but this one tastes like ass!

Max, it would be great if you made a video of mole (mole-ay) in Mexican cooking. It is generally made with cocoa.. Chicken mole enchiladas are one of my favorite meals when we frequent our favorite Mexican restaurant at the Mercado in San Antonio. 😊 i will have to try making a pot of chili your way once. With a jalapeno and tortillas. Yum yum! (I'm a native Texan and proud of it!)

As a anglo south arizonan I suspect the adding of beans may have come from times when meat was scarce, for example war time. I still prefer my chili bean free but when you are hungry well protein is protein,!

My Mom was born in Texas, her Memaw was born in Texas, and her Mamma was born in Texas…. I digress; erhm, we always put beans in home made chili. Corn bread or corn polenta/fried cornmeal mush. 😊😊😊.

I have found the same thing with curry, the second day it is much better. In the UK it is minced beef and beans.
