All this lore is so unclear and makes makes grand leaps in logic that it’s hard to even grasp or understand. It’s a quagmire of faulty assumptions and false premises makes you wonder why mankind has not just gone extinct at this point.

There’s a lot of things about this setting I think make no sense, but this is not one. War and everything aside, artificially created environments suited to human life are susceptible to cascade failure. This would lead to at least partial systemic collapse..

Its not like humanity in WH40k cant progress, bu they was forbidden to. By The Emperor himself, who see with his own eyes cutting edge technologies which literally tear apart planets and create black holes.

I don’t understand and never will understand how the spaceships are built. There is no way on earth and actually no way ships of the old humanity have been gothic churches with man powered guns. Especially looking at ground force designs. It doesn’t make sense. It’s bs.

I think what people forget is why STCs are so prized. It's not just a fancy blueprint for one item. It's a machine that, when you tell it what you have available, creates a step by step guide on how to make a thing. It solves the issues of lost manufacturing knowledge and technology. It's an instant step back to Golden Age tech.

Probably explains why everything is so blocky - everyone is blindly following instructions that assume you have nothing more than crude manufacturing ability, possibly unaware that it could be refined.

The concept of "creating a language incapable of understanding and perceiving" is one of the most senseless and pointless pseudo-science concepts ever. Not only has it been so commonly shown to not have reliable proof, but it is also a statement that goes against the very nature of languages. It is sad to see 40k use such a senseless trope.

What I don’t get, is if the STC’s were the pinnacle of science, why are the templates not advanced but instead have the gothic aesthetic which followed after the dark age of technology. Surely the tech from an STC template would be sleek, futuristic?

I actually dont buy most of it.
1st. The war with AI happened like 15.000 years before the current time of W40k. 15K years means roughly 500 generations. There is no emotional memory that survives that long. 15K years ago, we were hunter-gatherers, but seems even at this time there were a few societies which tried agriculture. They seems failed, but it isnt prevented to a later try. And if the age of strife havent started within a century or two after the end of the war with AI, most of human colonies must have recovered. Humans fairly adaptable. For example, by 1492, europe fully recovered its population after the black death. And important: the pestis disiease actually remained active in europe until about 1700, so plague hit quite regularly the eurasian societies.
2nd. I actually dont buy the humans became lazy by AI trope. Yes, humans are lazy, but actually this lazyness presses forward the technological innovation. And by the records of death by stupidity, seems the strongest human emotion is actually the curiosity. Even cats come to humans to learn this trait :) So no, most probably there were plentifull of people who understood the basic science behind the technology, and many more, who understood the technology itself.
3rd. STC-s might prevented the sciencific progress of the newest colonies, but many colonies probably well passed the limit, where STC-s were usefull. Actually the remained very few fragments of STC support this. Why? Because STCs were purpose built machines, to help newly founded colonies across obsticles which might destroy them. And on lesser part, to speed up technological progress. That purpose actually havent required to STCs be up to the most modern sciencific and technological knowledge. They just needed to be good enough to to the job. Yes, on their active time, people might not needed to invent too much, but there was a point, where the society reached the point, where the AI could not provide better solutions to the problems, than they already have. Might even some solutions be a bit clunky (like all weapons...) where an easy to produce but quite not so effective solution were created. Theese were good enough to do the job (and again: with relatively easy to produce), but if someone wanted to have better, then they better to put in good use the gray tissue in their brain.
But then why?
The actual solution is probably the emperor himself. Scientific and technological progress require a relative free society, where people free to try new things out. But theese societies might oppose a not entirely benevolent tyrant who believe a galaxy can be conquered by military force. So doring the great crusade, probably most of the societies were destroyed or brutally "reformed" where the ideas of enlightment were taken seriously. However those societies fared much better where there were a local tyrant. There, the Emperor (or the primarchs) just have to persuade the local tyrant that its better for him to accept the emperor. So in the end, humanity almost - or simply fully - run by local tyrants whose power were dependent on the emperor, not in a delicate power balance of the locals.
And what theese tyrants want? Stability. And stability here means, no one can endanger their power. And if some scientist, engineer come out a new idea, well its allways brings the possibility, that local power balance is become distorted. So most of the local tyrants solve this small issue by offering theese guys and girls to the imperial guard, where they can freely die in a senseless meat assault, where a well coordinated combined arms action might bring the result with much, much lesser cost. The inefectiveness of most IG is not by the imperium have enough manpower to sustain heavy losses, but by design: its a good way tho get rid of the problematic elements of the societies.
Because actually the imperium can not afford the horrific losses. Why? Because most of IG is not from the planet, where they actually fight, but from an another star system. Bringig a lot of men meany a nightmare of logistics, where while seemingly there are lot of manpower, but at point where it actually counts (where they shoot back) there is manpower shortages.
And even if some tyrants forget to get rid of theese dangerous folks, there is a tool to remain in power: flee to the imperium, and the imperium states back the idiot to power. Also massacres a few millions of citizens along the way. Because the emperor protects. The tyrants.

The mechanicus is largely in part to blame for the stagnation of the imperium, they withhold all the knowledge and are scared of it as they dont understand it.
Cawl is like the black sheep of the flock who goes against the grain committing tech-heresy to bring us innovations like the Primaris.
We will never see any new age of prosperity in 40k while the imperium and the mechanicum are in wedlock with fear of the unknown being their leading cause, not unless Cawl shakes their beliefs and they shed that old burden of fear over ai and technology which they will never do as he is the odd-one-out.

They are blind in their search for complete hard copies of stc templates, nearly all of the repositories were destroyed by the scrap chaos code during the heresy, or are locked up deep in some vault within a vault as they/someone didnt understand what it was and locked it away out of that fear they have due to the unknown/ai etc.
They wont reverse engineer even known items out of fear of commiting tech heresy. I love and hate the mechanicus for how they are with tech, yes its good to respect it especially the god engines and the tech that makes a interstella galactic empire functional like plasma engines and warp drives etc but then they use that same base level of paranoia applied to even toaster ovens and everything they dont understand ie cant identify.

Also bears mentioning that the AM’s attitude toward tech is in their institutional interest. The mystification of technology keeps the AM in an indispensable position to the Imperium. If they adopted a more encouraging attitude toward scientific inquiry and innovation, then before you know it the Imperial Guard and the Navy have their own R&D departments and you’re not the keeper of all the super special toys anymore
