i think you should create that app that you would like to see yourself working on the rest of your life. start with a minimal solid base of it. expand on it slowly and try to make this one work. Its kind of how most of us start out and then they fail and they stop doing this slowly. going through plenty of apps. But maybe now you are actually really able to create the experience you wanted to create in the first place. Just that you have to overcome that hurdle, that wall that resistance one builded up because it didn't work when you first tried.

I'm a teacher, teaching English in Hong Kong, and I was the opposite . I was looking for apps that would help in class that would not require the teacher to spend alot of time teaching students how to use. Couldn't find any so I have made some. Not amazing but functional, and doing ok (well the graphs are going up) oh...and hundreds of thousands of pounds!! Well played sir! Kinda embarrassed about my 50 bucks now!

Start with something easy to make! then make something complex.

Sanam, how about an app that displays the current interest rates for various companies? May be good for people whom are considering re-financing their homes. Should be pretty easy to code and a good learning app.

I think this is the wrong question to start with.... you should want to make something to solve a problem or entertain not just wanting to make an app and asking what to do.... you can do everything........
