Why not use Lime plaster for all the joints otherwise the cement will always be dusty unless you can seal it with something

Such a shame you didn’t do this at the start. You could have used a pressure washer and blasted the whole thing.

Already been mentioned and it's probably too late now but watch Camper Vibe in Ireland on how to prepare for repointing stone walls. Also the Indie Projects doing their first old barn renovation in Portugal.
There are others as have been mentioned. Don't think you can leave the old mortar in. They all cleaned it out thoroughly and then repointed. It's a lot of work! The mill is really taking shape and looking good. Well done. The workers you have are great guys. ❤

Hello from Tucson Arizona! New subscriber. Something I use for coating / painting stucco (and drywall) surfaces is mix a box of mud with a gallon of paint after it's rolled on with a long nap roller the paint comes to the surface and you get two for one with a little texture. You have some really talented helpers there, I just had a wall covered with stone and I know how hard it can be. After cleaning and finishing a rock wall I use a clear Saltillo tile sealer (spray on) . This stabilizes any loose stones and makes cleaning with a vacuum much faster and more thorough. I use a dry pressurized media system with walnut shells to clean rock walls. The cleanup is fast and easy and no water is used. The walnut shells are not super aggressive and you can adjust the pressure. I don't know if you can order from harbor freight there but a dry media sprayers should be available. Very good job!

There are so many channels that show how to prepare stone walls. Watch today’s episode of Chateau de Razac for one. You need a power chisel for one thing and need to remove all of the lime, concrete etc. before repointing.

Do not lift heavy rocks with your back! You will pay the price both at the scene and most probably again and again much and not so much later.

if you want to see a great DIY repointing go watch the women on @campervibes. They're in Ireland and are repointing an old stone farm house. It's their first time doing so and they're doing a terrific job. They learned from a friend who did the same.

I recommend using Lime Mortar to point your stone walls. It is breathable and will allow the walls to dry out.

You have to pressure wash it and fill the gaps with the small stones and mortar. Seek Raising voyagers to see the difference.
It is coming out great.

Apple cider vinegar. I was consuming a similar amount to you, then earlier this year got hit with gastritis. Took months to recover, consider yourself warned. It was awful.

Get an air compressor and air clean the stone walls by blowing them. Maybe hook up a strong vacuum cleaner that will suck the blown air back in at the same time. In fact, tape the vacuum nozzle to the air nozzle and have at it.

I doubt they used cement between the stones at that other project. Cement would cause moisture issues. If you don't want water inside, dry sandblasting might work.
For your LUNCH, have you ever tried just cutting a hole in the bread, put in the pan, drop a bit of butter in the hole, then add an egg. You can then flip it, and still get toasty bread, with an over easy egg.

You can make some mortar about cake batter consistency and put some in a large plastic zip lock bag and cut a little piece of one corner off and squeeze it out onto the wall between the rocks to lock in the rocks that you uncover and with a damp sponge you can form the mortar to make it look more natural.
