🙋 Kevin, In noodle shop:-
The red one is "tsai po"→Chinese style homemade spicy preserved radish, mainly ingredients are radish eith chilli.
The green one I guess is "tung tsai" →Tianjin style preserved vegetables, the taste is salty.
The square one is not Tofu, it should be“cha lua”→pork sausage just like Vietnamese pork sausages.

Hi there. I think the "fatty stuff" in your noodles is beef tendon. Usually in Hong Kong, when you order beef brisket, it comes with a small amount of beef tendon. However, some restaurants allow you to order them separately, such as beef tendon noodles or beef brisket noodles. Beef tendon is one of my favorite food, yum 😋

I searched for the T7 Shield price and found it being sold for only US$95 for 1TB on a Hong Kong website.

Discount could be found on Women Street, Temple Street, but not for tech stores. For competition, their price are low and fixed.

The piece of meat that you thought was tofu- it looks like a piece of fish cake to me. Also, the bit of beef that you didn't eat- I think it's beef tendon instead of fat :)

Locals go to Sham Shui Po (SSP) for techs stuff, u can find almost everything in these two shopping centres, Golden Computer Centre and Arcade, very concentrated. For clothing, shoes stuff like that go to Mongkok (MK). Not locals enough, stay longer😊just kidding.

I think it would be better to conduct the tech hunt in Sham Shui Po rather than in Mong Kok, especially since you ended up going to Sham Shui Po for dinner after all. 😂

The "fatty" stuff is actually beef tendon. The texture is fatty like but it's actually collagen and mostly protein. I believe condiments were preserved radish with chili

Sometimes after living here in Hong Kong for over 15 years since I moved back after I studied in Canada for most of my life till 2009, I realize one thing that whenever you're looking for a particular item, if it's not available, then it means the stocks are out completely, so the next cargo container into Hong Kong is in pending and you should just not get it until the problem is resolved. What I mean is, you found a way to fix it, but it wasn't what you originally wanted although it works, so when the next time you are searching for the newest item, it's going to feel less new (if you know what I mean). Furthermore, Hong Kong is one of the fastest pace cities in the world, and sometimes it's not about "people" that are fast, but rather the way things go from zero to a 100. If something is popular, you can bet there will be a trend, and vice versa. Thats what makes Hong Kong the way it is with a system in which imports and exports are both synchronized. But lets talk about economy on another day.

If you visit Sham Shui Po, I recommend checking out Golden Computer Arcade and Golden Shopping Centre—great places to explore for all kinds of tech products. You’ll also find SSP outlet in the area with cheaper tech items, though I wouldn’t really advise buying electronics there. Still, there are tons of interesting things to browse.
As for the thing in your noodles—it’s not tofu. It looks more like a fishcake, and that gooey part with the rich texture? That’s beef tendon, full of collagen.

Most of the waitress working in Hong Kong restaurant are from mainland so you can talk to them in either Cantonese or mandarin. And sham shui po is said to be the poorest district in hong Kong but the property there is not cheap either and are a lot to explore👍 btw, that’s not a fat, but a beef tendon with lot of collagen good for your skin😂
