I hate to state the obvious, but unless you have two identical steaks, then you are not really comparing the two, its not an experiment, but rather a display of your lack of knowledge.

My neighbor told me you can't smoke a steak I legit looked at him was like hold my beer Imma show you how it's done lol couple hours later I dropped one off at his door n he said it was the best steak he's ever had

Oil will prevent smoke from penetrating the meat. Just use water for pepper and salt to stick

You need to smoke it to about 125 F , then compare. Cook it like a steak !

I don’t smoke my meat because of the potential adverse health effects of the smoke on the surface of the meat. Just stick it in the oven for 5 hours and it’ll melt in your mouth.

no no no, you fucked up two perfectly good steaks. neither of those methods produce the best results. first dont use a "steak" thats 5 inches thick, second dont cook it to 200 degrees. this isnt a fucking brisket. get your self a normal sized steak, more like the one you cooked the traditional way. get the camado up to 275-300 aiming more for 300. throw in a bunch of hickory chunks and the steak. cook it till its get up to about 135 or whatever doneness you prefer your steaks at, again this isnt a fucking brisket. juicey, tender and smokey. I have tried low and slow smoking a steak and the results were crap compared to the steps i just described.

I smoke my steak all the time. Granted I buy mine in whole sections from the butcher and cook them whole. But I never go above 135 degrees. Unless it's chuck roast or brisket.

Smoke with 1/3 hickory and 2/3 Apple to 125°.

Spritz with 1:1 garlic rice vinegar and apple juice mixture every 30 minutes.

Finish in hot cast iron pan with some rosemary and butter.

Let sit for 10-15 minutes (hardest part of the process)
