Spicy Fried Kembung Fish 香辣甘榜鱼

Kembung Fish (Indian mackerel) normally is deep fried, pan fried or cook into a spicy curry. It's a common home cooked dish. This recipe we give a simple twist by having fish curry sauce. Check out the full video and recipe:-

INGREDIENTS:-
2 KEMBUNG FISH
SALT
4 SLICES OF GINGER
2 TABLESPOON CORN FLOUR
2 CLOVES MINCED GARLIC
1 MINCED RED CHILI
100ML WARM WATER

SAUCE:-
2 TABLESPOON OYSTER SAUCE
1 TABLESPOON BABA FISH CURRY POWDER
1 TEASPOON FISH SAUCE
1 TEASPOON SUGAR
2 TABLESPOON WATER

GARNISHING:-
½ MEDIUM SIZE RED ONION SLICED
1 HANDFUL OF MINT LEAVES
2 CALAMANSI


1) PREPARE FISH, CUT 2 SLITS ON BOTH SIDES
2) SEASON WITH SALT. ADD GINGER SLICES INTO CAVITY THEN
COAT WITH CORN FLOUR
3) FRY EACH SIDES FOR 4 MINUTES UNTILL CRISPY AND BROWN.
4) IN A BOWL, COMBINE OYSTER SAUCE, BABA FISH CURRY POWDER, FISH SAUCE, SUGAR & WATER
5) ADD 1 TABLESPOON COOKING OIL IN A PAN, FRY GARLIC UNTILL FRAGRANT
6) ADD IN RED CHILI, SAUCE & 100ml WATER
7) GARNISH WITH ONION SLICES, MINT LEAVES & CALAMANSI
