In my opinion you are overdressing your flies, (or at least the ones shown in this video) as well as many people tying steelhead flies now a days. If you use fewer materials and less of each material, one wont need to add big cones or barbell eyes to their flies. Plus with less material on the hook, the fly will swim better, the materials will undulate more freely, and the fly will sink uniformly. Like you were saying "less is more" ;)
