I highly recommend you try this easy chicken embutido recipe. If you don't eat pork, or just watching your fat intake, then chicken meat is a better option for you. I will share to you the ingredient to make tender and moist but not mushy embutodo!!

Ingredients:

3 lb ground chicken
1 1/2 tsp baking soda
1 large yellow oinon, minced,
1 large carrot, minced
1 large red bell pepper, minced
3/4 cup sweet pickle relish
1/4 cup raisins
1 1/2 cup sharp cheddar cheese
3 large eggs
1/4 tsp ground black pepper
t tsp salt
2 cups breadcrumbs ( I used panko), but you can you use plain breadcrumbs

The finer you can chop the vegetables, the better as it will blend nicely to the mixture. I recommend using food processor/chopper to speed up the process, but if you don’t have you can do it manually.

Boil water, once boiling,steam for 60 mins.
