The planets absolutely can align!
The story goes that after the big bang (or indeed after the supernova of a collapsing star), debris will begin to coagulate due to mutual attraction due to gravity.
A rotating ball surrounded by a disk is formed, (the so-called acretion disk).
That ball at the centre becomes infinitely denser & hotter ultimately forming a star. As the disk rotates about it smaller lumps of matter form planets & gradually collect all the other random matter orbiting the star. Eventually you will have a solar system.
Point is, all the planets are orbiting the sun roughly on the same plane, within a few degrees at least, because of how they were formed from the same rotating disk.
This is why we have the zodiac, as when viewed from the earth all the planets follow the same path across the backdrop of stars crossing the same 12 (13 really) constellations.
Several planets (i believe about 7 if memory serves) did align quite recently on the winter solstice one year. I forget which constellation, maybe it was 0 degrees aquarius? 😂i
