This vibrant beet soup, known as borscht, is a beloved classic in Ukrainian kitchens.
🥄 Ingredients
• 400g beef (with bone)
• 1 chicken fillet (preferably with bone)
• 2 carrots
• 1.5–2 onions
• 3–5 black peppercorns
• 1–2 bay leaves
• 1–3 beets (depending on size)
• 3 potatoes (medium)
• 1 bell pepper
• 1 small cabbage
• 2 tbsp tomato paste
• 1 garlic clove
• Fresh herbs (dill, parsley)
• Salt & spices to taste
• Water for broth
🥣 How to Make Ukrainian Borscht
1️⃣ Simmer beef and chicken with carrots, onion, peppercorns & bay leaf for a rich broth.
2️⃣ Remove meat & veggies. Chop meat, discard used vegetables.
3️⃣ Dice potatoes, slice cabbage, grate beet & carrot.
4️⃣ Sauté onion, carrot, bell pepper, then beet with tomato paste.
5️⃣ Add potatoes to broth, cook 5 min, then add cabbage & meat.
6️⃣ Stir in sautéed vegetables, garlic, salt & herbs.
7️⃣ Let borscht rest before serving. Best with sour cream & fresh dill!
