I replace a tablespoon or so of the flour with coarsely ground buckwheat flour (not Bob's Redmill: too fine for good flavor) in brownies and almost anything that calls for flour, for great flavor. Coarsely ground buckwheat can sometimes be found in bulk bins in natural foods stores.
what about "Bakea" cocoa powder and also "Rossmor"

ОтветитьI always prefer a high quality natural cocoa powder( like a Ghirardelli brand). Dutch processed tastes too mild for me, making it overrated since you tend to pay more for dutch processed over natural. And a simple splash of coffee or additional solid chocolate will make an even better brownie overall. However, I will admit that dutch processed cocoa makes a fudgier texture when making a fluffy chocolate cake.
