Vegetable Dhansak
Authentic delectable Parsi recipe
Parsi community is very good hearted, peace loving and happy go like. The taste of Parsi Dishes is unique. There are three types of Dhansak. Chicken Dhansak, Mutton Dhansak and Vegetable Dhansak. I have humbly tried to explain the method of cooking Vegetable Dhansak.
Ingredients:
Split pigeon peas (tuvar daal) half cup
Split Bengal gram (chana Daal) Half cup
Split skinless green gram. (Mung Daal) Half cup
Split skinless red lentil ( masur Daal) Half cup
Carrot 1 medium
Potatoes 2 medium
Onions. 2 medium
Tomatoes. 2 medium
Fenugreek(methi) leaves. 1 bunch
(You can replace it with 2 Tspoon Kasuri methi, that is dry fenugreek)
Green chillies. 4-5 chopped
Lime Half
Dhansak masala powder. 4-6 table spoon
Pumpkin (or lauki - dudhi) 150 gms
I have replaced pumpkin with lauki - dudhi
Turmeric powder. Half Tspoon
Red chilli powder. 1 Tspoon
Kashmiri Red chilli powder. 1 Tspoon
Coriander powder. 2 Tspoon
Cumin powder. 1 Tspoon
Salt to taste
For Tadka:
Ghee (clarified butter). 2 table spoon
Garlic cloves. 4 -6 chopped
Oil
Method:
1. Chop onion, tomatoes, green chillies separately.
2. Chop green of methi (fenugreek leaves).
3. Cut carrot, brinjals and potatoes in cubes.
4. Wash all the lentils and soak in water for 4 hours.
5. In a pressure cooker, heat 8 cups of water.
6. When boils, add all vegetables, except onion, tomatoes and green chillies.
7. Add salt to taste.
8. Add all the lentils.
9. When boils, cover the lid of pressure cooker.
10. Blow 2 whistles on high flame and 5 whistles on medium flame.
11. In a frypan heat 2 Tablespoonful oil and add chopped onion.
12. Sauté till golden brown.
13. Add 2 Tspoon of ginger garlic paste.
14. Sauté for 2 minutes so that the raw smell vanishes.
15. Add chopped green chillies.
16. Add chopped tomatoes and a little salt.
17. When tomatoes are soft, add half Tspoon turmeric powder, 1 Tspoon red chilli powder, 1 Tspoon Kashmiri red chilli powder, 1 Tspoon cumin powder, 2 Tspoon coriander powder.
18. Sauté well till oil separates.
19. Now look at the pressure cooker.
20. If steam is released, add whole Daal mix to the frypan and stir it with stirrer.
21. Add Dhansak masala powder (4 table spoon) to Daal. Mix well.
22. At this stage taste the salt and dhansak as well.
23. Adjust the salt and Dhansak masala powder.
24. Squeeze half lime.
25. Cook for 3 minutes.
26. Now we will give Tadka (vaghar).
27. In an iron mettle bowl, heat 2 Tablespoonful Ghee (clarified butter).
28. Add chopped 5-6 garlic cloves.
29. When done, add to Dhansak.
30. Cook for 3 minutes.
31. Parsi Vegetable Dhansak is ready.
32. Cherish with Brown rice and onion salad.
