Healthy & High-protein Blueberry Yogurt Parfaits💜 These are a fun and delicious breakfast idea😋 I used nonfat Greek yogurt in these that contains 13g protein per 100g! You could also use quark, skyr or protein yogurt!☺️

For one serving you need:
3/4 cup (lactose-free) nonfat / low fat Greek yogurt (180 ml / about 200g)
4 tablespoons blueberry chia jam (recipe below)
4 tablespoons granola (recipe below)
2 tablespoons crushed walnuts or your favorite nuts

Blueberry chia jam (this makes extra)
1 cup frozen blueberries/wild blueberries (240 ml / 170 g)
1/4 cup water (60 ml)
2 tablespoons chia seeds
1 tablespoon maple syrup

1. Add the berries into a small pot, heat over medium heat, until thawed, for about 3 minutes
2. Mash the berries with a fork
3. Add the rest of the ingredients and stir
4. Let set in the fridge for 1 hour
5. Store in an airtight container

Easy Granola:
2 cups gluten-free oats or buckwheat flakes (480 ml)
1/4 cup melted coconut oil or olive oil (60 ml)
3 tablespoons maple syrup
2 teaspoons vanilla extract
2 teaspoons cinnamon
1 teaspoon cardamom

1. Mix all the ingredients together.
2. Spread the mixture on a baking pan lined with parchment paper.
3. Bake at 180 Celsius degrees (350 in Fahrenheit) for 20-25 minutes (mixing in between)
