I'm a big fan of breakfast so my favorite lunch would be a sunny side up egg or over medium and I'll dip my toast in the yolk. That or scrambled eggs with toast or a bagel & different jams. (And yes I also have breakfast on top of my breakfast/lunch)

My go-to is a Wuhan style dry noodle. Blanch up some veg or tofu with the noodles, and you've got a 15 minute, 1 pot meal

For lunch I have recently gone for a salad with plain salad, 2 eggs, tomato and then just some toasted bread I have sliced. With a spoon of mayo and some salt and pepper it is surprisingly refreshing :D
