Ice cream that only gets blended and not frozen? How about putting everything in a bowl and then putting this bowl in ice mixed with salt and stirring until it gets frozen?

In high school bio lab we had to purée frozen strawberries for an experiment. And it was just strawberries to keep integrity of the experiment, but we had a bunch left so me and another girl just shared the blender it was the best thing I ever tasted, even if the others thought we were gross to eat straight from the blender.

This is not ice cream, it is sherbert.

Thanks for the idea Kalem. As I am a diabetic it might be a way to avoid issues with commercial ice cream and sorbet. Have you tried any other fruits? I am wondering whether frozen brown sapote would be a good chocolate ice cream substitute.

If you want to make it even creamier, you can change out the plant milk for coconut cream.

Or if you prefer a sorbet, just use frozen strawberries and a little bit of fruit juice.
