The beef and lamb for your Beijing style hotpot was in "standing position" because it shows they were prepared in kosher style, meaning all the blood has been properly drained, so there was no single drop of blood dripping down. The meat prepared this way are more tender, and they do not create dirty blood clots when you boil them in the pot, so the soup stays clear and appetizing 😊
