Question Aaron, I cook breast to 65 degrees, but always aimed for 75 degrees for leg/ thigh. I've always seen too much redness at 65 degrees for leg/ thigh. So how does it work in this situation? I've never quite understood it.

What do you think about brining and then drying and leaving overnight in the fridge? I've seen some chefs do that, but it seems a bit labour intensive - would it be worth it?

We have our own family restaurant in Sardinia, often customers ask me for advice, most of the time I tell them to keep it simple, do not f*ck with the food.
Buy quality ingredients and learn how to control temperatures, modern day cooking is just to pretentious.
People trying to cook ridiculous complex meals and not mastering basic cooking techniques.
You're channel is very direct and straight to the point, great stuff.
