What you are actually doing is homogenizing the ambient light and the emitted light. Leaving only the emissions visible to the naked eye, we don't see heat except as a distortion. So the burnt carbon and particulates as they diffuse and are lifted by the flames heat transferring into them through the air is what we are actually seeing. Nothing more nothing less. The wavelength of sodium is simply one of the most powerful and encompassing of its surroundings without burning our eyes but also able to block out other wavelengths to a significant enough degree. Any more activity and that intensity of light needed to create a similar effect would emit enough blue light to blind us or cause permanent damage to our eyes.
