ОтветитьI'm a 60 year old man in America. I've been retired for four years and I do almost all the cooking in our home. During the week, I cook for three. But for Sunday dinner, our three adult children and our grandchildren usually come for the day to visit. I strive to prepare the dishes that they like most, paying attention to everyone's favorites with special attention to our grandkids. I want to foster their interest in and enjoyment of family gatherings. And they seem to take to it naturally and cherish our Sundays together.
I enjoy learning not only the recipes of different countries and cultures, but the cooking and prep techniques that play a big part in how food is enjoyed around the world.
I especially love Italian recipes and dishes from the many regions of far East Asia, which used to be called Oriental Cuisine.
But there is something I find to be true in many of the best online video resources taught by classically trained chefs and restaurateurs. It's the fact that, although the teaching is aimed at working people seeking to feed their families good meals at home, most if not all of their dishes are presented as though they are intended to be served in a restaurant setting. And for couples or families of three, this approach likely works well. But for larger families where time to cook every meal individually simply doesn't exist, a restaurant approach becomes problematic.
For example, in the simple task of cooking spaghetti noodles, most every trained chef will insist on teaching never to rinse the pasta or add oil. Also, it is taught to add the cooked pasta straight from the pot into the sauce because the starchy exterior more readily soaks up some of the sauce. And, yes, for only one meal, this is the most flavorful method.
But if you cook at home as I do, you cook for more than one meal at a time. Sometimes you cook so that family members can take food home from Sunday dinner to be enjoyed for lunch at work on Monday. And the restaurant approach does not work well at all for my needs.
In fact, pasta prepared that way and reheated as leftovers results in a dry glob with the noodles overcooked and unappetizing.
As families, not restaurateurs, we develop our own ways of preparing meal components so that the second meal is also enjoyable.
Back to the spaghetti. I achieve the best success preparing it the way chefs teach us never to do it. I rinse the cooked pasta twice in hot tap water, drain it well, then stir in olive oil or butter.
This method removes the sticky starch and keeps the pasta from sticking together when stored in it's own container in the fridge.
And when served again, the texture of the pasta is much more palatable than before. The whole meal experience is very similar to the first.
I greatly respect your skill, ability, and experience. I've cooked many of your dishes and I enjoy your channel immensely. You are very professional in every aspect of your teaching. And I thank you for sharing your expertise.
Please don't think my comment is criticism. I don't intend it to be. But I do hope that working parents who read this comment will understand that chef inspired meals can be adapted to fit how they approach meal planning with limited time for cooking.
Cracked peppercorn pasta with pecorino, would be awesome for a frittata😊

ОтветитьSo many people are afraid to add anchovies to their dishes but they shouldnt be! I was never a fan of them but love their salty flavor in many pasta dishes and my favorite homemade salad dressings. Thank you for sharing your tips! I enjoy basic pasta meals-- they are always yummy!

I listened to your video carefully as you stated incorrectly twice. Thank you mate.. Buy the way, I've never had this creamy version of this pasta preparation. I will try is cause it looks delicious, specially the browned version where u blender the garlic after it has fried. I will boil my pasta al dente and then mix it in with the sauce and some of that starchy boiling water. One of the risks of cooking pasta like you did at the beggining of your video is that if one is not careful, the final product tastes like a lump of starch...Thank u for your creamy blended and fried garlic sauce. It really made my day!!!!
