Ingredients:
For the cupcakes -
1 3/4 cup all-purpose flour, spooned and lvled
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup unsalted butter, softened
1 cup light brown sugar, packed
2 large eggs
1/3 cup full fat sour cream
1/4 cup vegetable oil
2 tsp vanilla extract
2/3 cup whole milk
1/4 cup dulce de leche (for cupcake filling)
For the dulce de leche buttercream frosting -
1 cup unsalted butter, softened
2/3 cup dulce de leche
2 1/2 cups powdered sugar
pinch of salt
gold sprinkles, optional
Directions:
To make the cupcakes - To a small bowl, add in all of the dry ingredients, mix and set it off to the side. To a large mixing bowl, beat together the butter and brown sugar until well combined. Add in the eggs one at a time mixing between each addition. Next, add in the vanilla extract, vegetable oil and sour cream. Mix until combined.
Next alternate adding in the dry ingredients with the milk, mixing between each addition. Using a spatula, scrape the sides of the bowl as needed.
To a standard size cupcake pan lined with cupcake liners, fill each liner 3/4 of the way full. Into a preheated oven at 350 degrees for 15 minutes. Let the cupcakes completely cool before coring out the centers.
To make the dulce de leche buttercream frosting - To a large mixing bowl, beat the butter until light and fluffy. Then add in the pinch of salt and powdered sugar and mix until combined. Add in the dulce de leche, mix until nice and smooth. Transfer to a piping bag fitted with an 6B piping tip.
Assemble the cupcakes - Grab a cupcake and, using a knife, carve out a small hole in the center of your cupcake. Using a piping bag filled with dulce de leche, squeeze in a tsp or two into each hole. Cover with the piece of cut out cupcake top. Grab your bag of frosting and pipe out a layer or two of frosting. Using a squeeze bottle of dulce de leche, drizzle some onto the top of the frosting. Sprinkle with gold sprinkles as a final touch. Enjoy!
