ОтветитьBurning off the vodka is probably a mistake. The point of putting vodka in a tomato sauce is that simmering tomatoes with alcohol helps extract flavors from the tomatoes. That won't work as well if most of the alcohol burned off before there were tomatoes in the pan.

ОтветитьIt’s good, but you didn’t fry off small pieces of guanciale or pancetta for the first step. Render them down, and deglaze with the vegetables and a touch of tomato. It’ll be much tastier next time that way.
