Xylitol is currently in the news because a recent study showed that it may increase your risk of heart attack and stroke. Xylitol is a natural sweetener that is found in small amounts in fruit and vegetables. Our own body also produces xylitol at around 5g to 15g daily during normal metabolic processes. The amount of xylitol consumed with sweetened food or beverages is significantly higher, usually on the order of 30g per serving. This can increase our xylitol levels up to 1000 fold.
The study looked at 3000 patients and found that the 25% with the highest xylitol levels had a 2x increased risk of heart attack and stroke. To confirm this observation the research earth conducted further testing and found that xylitol can activate platelets increasing the risk of clot formation.
