Buon giorno a tutti. In this episode, Nonna Mia, la nonna di tutti (everyone's grandma), is joined by her granddaughter, the baby of the family, Bella. Together, they decided to make a lovely frittata with rapini and sausage for lunch.

Here are the ingredients you need:
- 8 large eggs
- a bunch of rapini (sauteed / rough-chopped)
- 1 cup of crumbled Italian sausage (1.5 sausages)
- 1.5 cups of shredded mozzarella
- 2 cloves of minced garlic
- 1/3 cup of grated parmesan cheese
- 6 T of flour
- 1 t baking powder
- 1/4 cup of water

First, you will want to prepare the ingredients. Sautee the rapini in EVOO, until tender, then rough-chop, and set aside. Remove the sausage from their casings and fry up the crumbled meat. About one and a half sausages make a cup of crumbled sausage. If you like a meatier frittata, feel free to add more.

In a mixing bowl, beat the 8 large eggs. Add in the grated mozzarella & parmesan cheeses, the minced garlic, the sauteed rapini, and the crumbled sausage. Stir in all the ingredients then next, make a slurry. You do this using 6 tablespoons of flour, 1 tablespoon of baking powder, and about 1/4 cup of water. Blend well. It will start to thicken and react, then fold the slurry well into the frittata ingredients.

Heat a frying pan with some EVOO (about 3 tablespoons) and once hot, add the egg mixture to the pan.

It takes at least 10 min to start to firm up. Nonna likes to make a small hole in the center with her spatula and she adds EVOO into the center of the frittata. You want to lower the temperature to medium-high so the frittata doesn't over-brown.

If you are feeling brave, you can flip the frittata into the air and catch it on the other side. You can see Nonna doing her signature flip in episode 4 (https://www.youtube.com/watch?v=oJ-T08JOvBo). But lately, Nonna has been feeling more comfortable sliding it onto a large plate/platter and transferring it back to the frying pan to firm up the other side. We wonder if it has something to do with us capturing her rare 'flop' on TikTok. ;-)

Slice up and serve with some toasted Calabrese bread, or a bread of your choice.
