I'm an amateur / hobby cook who has learned to cook from books, shows and videos, and I would say that some ingredients clash or react in a chemical way with one another.
I often experiment, and I was steaming a piece of cod in a bag. I often use things like lemon, thyme, dill or chilli, soy sauce, fish sauce, 5 spice etc. You get the idea.
I put lemon juice, parsley, salt, pepper, a splash of white wine in the bag with the cod, then had this idea to add sliced red chilli....Chilli goes very well with fish after all????
NOT WITH WHITE WINE IT DOESN'T!
I'd describe the taste as, fish in chemical waste sauce.
It was horrendous, and I had to throw it away after one mouthful. 🤢
I learned something about cooking that day.

One of my favorite dishes uses just 3 ingredients: Elbow macaroni noodles, jar Salsa Con Queso Cheese and a can of either Tuna, Salmon or Chicken Breast. Cheap, easy, fast and delicious.

I gained confidence when I realised that the less ingredients you use the more accurate you have to be with the ingredients. Don’t over complicate the dish.

In México we got the phrase “and then I add everything I found in the pantry and it turn out good” but it’s a phrase that suits amateur dads, who occasionally enter the kitchen to make a mess, as well as improvised cooks. The best food is made with anything you have, not everything you can find.

I found this out basically in three different ways. I used to work in food services and when I make my own meals, I will chalk it up to I want something that tastes good with the least amount of work.

The second reason I found less is more is ordering sub sandwiches. When I made sandwiches where a customer wanted damn near all the ingredients I had to assume it was the equivalent of drinking up all the liquor spilled on a bar mat in a bar. It looked like a mess and I saw that it wouldn't taste too great. Again, less ingredients more of them, spinach instead of ice berg lettuce, lots of green peppers, light onions, oil, vinegar and oregano.

The last one was a Mongolian Grill location here in the Phoenix area called Gengis Grill. You choose your own ingredients and the meal tastes better if you had more of the ingredient and less variety. Especially when eating the leftovers since the meals are large.

So often "less is more" when it comes with flavor. Again do you want a nice simple cocktail or do you want the bartender to just pour the drink mat into a cup?🤔

I've been trying to recreate Chinese takeaway curry sauce. One recipe that used a lot more ingredients as you said didn't make it better. By the way, if you have a recipe for Chinese curry paste and the curry itself, I'd love to try it. I emigrated from near Newcastle to oz and have tried many many recipes.
