Chicory is a perennial plant of the dandelion family with blue flowers. The root of chicory is commonly used as a caffeine-free substitute for coffee, as a food additive and even as a nutritional supplement.

The main attraction of chicory root, aside from its flavor, is that it is an incredible source of dietary fiber. A significant amount of the fiber found in it is naturally soluble dietary fiber made up of inulin.
