I've been using the methods you showed on the Verve channel for a while now and I found this channel recently. I like your videos! Are you planning on doing a Chemex tutorial for your extract everything series?
ОтветитьThank God someone is highlighting the importance of the final stir. So many pourover brews (Chemex, V60, Beehouse etc) and Clever brews have been served to me with coffee caked to the sides all the way to the top of the filter.
High and Dry AF = garbage
Another great feature of the Clever is the lid. This allows you to cover the brewer during the brew phase and trap as much heat as possible, resulting in a more consistent brew temperature throughout.

Please can I get some advice;
My boss is currently advertising the coffee shop as speciality and it isn't - it frustrates me and the situation is killing my passion.
A second spot has been opened that goes against values the first spot was established on (furthering speciality in South Africa) and I'm being forced to work there - it's slowly killing me, and stealing my passion. I have approached my boss to seek change and understand perspectives and situations, nothing has changed.
From your point of view, what do you suggest?
I'd really appreciate a response.

For the office setting what do you like more? Clever or Aeropress? I've never tried either, but have an Linea Mini at home. At work all there is, is a keurig!

I generally find that after brewing coffee it's too hot to drink straight away. I'd even be as bold as to say, almost all brewed coffee is too hot to drink straight away.
So, why do most people recommend preheating your drinking vessel? Would it not be better to have it cool so it reduces the temperature of your coffee to a more palatable temperature (plus, speciality coffee usually tastes better cooler?)
Hi Chris, I really like your videos and learn a lot from them. I have a question about the instructions in this video regarding your video about French Press. Ostensibly, there is no difference between the Claver and French Press. Both are Brewing methods for making coffee by immersion. If so, why do you instruct to wait 4 minutes before sttiring in the french press and in the clever
only 2 minutes?
When i pour the water over it produces a lot of foam. Is it because the coffee is too fresh (one week old)?

ОтветитьJust got my Clever drippers today S & L, (all the way down to New Zealand) awesome coffee, simpler than the Hario pour over although that one is awsome too, just takes more concentration. Thank you Chris, if it wasnt for this vid and all your others that you have done I could have been lost in the coffee brew arena. Up till now I have been using a Moka stove top (Bialetti, would be cool if you did a 1 min on that one), drinking good coffee is such a cool place to be!!

ОтветитьOne of the best tools to make coffee, specially if you are making coffee for group of people. You may make coffee with only pre-weighted coffee and hot water from the kettle. I stringly recommend the CLEVER dripper for every one, even advanced baristas because it merges the brewing benefits of other tools like V60 & French Press in one place.
ОтветитьHow does your water drain so fast I usually end with water stuck at the bottom and it takes about 10 to drain?
ОтветитьI'm not sure if this helps anyone but i find that if I bloom pour 3x the coffee weight in water and wait 30 seconds the grounds wet and settle better to the bottom. I still do the stirr at the end without folding and get less coffee grounds stuck to the sides and generally flatter filter bottom than this method.

ОтветитьI'm curious has to how much of the extraction with this method is coming from draw-down, i.e. coffee moving through a bed, vs steeping. For a steep it's pretty short, a french press steeping this length of time would not be particularly well developed yet.

ОтветитьI use the clever a lot. I don't think 2 minutes brew time is accurate. It certainly doesn't work for me.
I brew for 4 minutes, and a brew variation of as little as 30 seconds either way will be noticeable. If I am almost perfectly dialed in I will fiddle with brew time after I get the grind right.
Also adding the water before you add the grounds is a better practice.
If the bulk of the extraction is happening during the immersion phase, is it really that important to make sure that no grounds are stuck to the side? Has anyone ever tested this?

ОтветитьOk, i'm no expert so if my question seems.... Since coffee is a Spice, don't you want to include the extracted oils from the grounds into your drink? Won't the paper filter block the oils from blending into the drink? Just asking....
