I have been making pineapple upside down cakes for many years - 30 years! Got my recipe from my mother…I grew up eating this cake every festive events throughout these years ! It’s just so delicious & looks so pretty too! Yes, I put cherries in the center of each pineapple slice! Yum in the tum! 😋

My go to recipe is using golden syrup instead of the sugar and butter, pineapple upside down cake is one of my faves. With the optional cherries and a good slash of pineapple juice in the sponge mix. I’m in the UK so use an all in one sponge recipe using butter, not oil. Glad to see you show the love for this yummy cake😊

I make a similar recipe using pears & almond flour - just gorgeous! I took just got a KitchenAid & I can highly recommend upgrading the paddle to one with a rubber edge as it scrapes round the edges & mixes everything even better! Enjoy
