It's ironic that Ulfric is so butthurt about the Empire "betraying the people" in signing the White-Gold Concordat, while he himself believes that the White-Gold Tower fell because of information he gave the Thalmor. So, he cracked under severe pressure and hurt all of Tamriel, but when the Emperor cracks under severe pressure he's got to burn down the Empire?

Granted, this belief that Cyrodil fell because of his information is wrong, but you would still think he would sympathetic to Titus Mede's dilemma. At least the Emperor's bad decision came from considering his people, not just his own suffering.

It's not just the stormcloaks that felt betrayed by the empire the red guards also felt betrayed and so hammerfell left the empire and became an independent country

Ulfric didn't get much of a choice. If you read into the lore, you'll know that all the Nords that fought in the Legion were basically betrayed by the Empire. Ulfric among them. And what's more, the Empire even tried to backstab Hammerfell because Hammerfell's rebellion has been going exceptionally well against the Thalmor. Ultimately, it's just the greed of the Empire determined to maintain their rule over the entire planet that is their own actual weakness. You can't blame Ulfric for doing what Hammerfell did and rebel. Thalmor cannot maintain an occupation over the entire planet, which is why they resort to using the Empire to do their dirty work for them.

About the war crimes at Markarth: No Reachmen in the Mines named Ulfric as the one who did the crimes and the book is written by an Imperial. So there is a possibility that the crimes were committed by the Jarl of Markarth who asked for Ulfric's aid along with the Imperials and blamed it on him. Not that I came up with the idea but I think I first heard that valid criticism of the book from the boys of the channel Fudgemuppet

Also I am neither a Stormcuck supporter nor a Simperial OF donator but saying independent Skyrim can't survive is just an argument out of fear of what happens without the status quo. Every nation or Empire at one point or another will have to do sth drastic to stay in power or gain independence and it will always cost a lot. There's no best time for a rebellion. Also we totally don't factor in that Skyrim could make alliances and even if not you basically can't invade Skyrim. Whilst I think it is, practically, better if ulfric didn't start his rebellion, after he did, skyrim remaining part of the empire became unfeasible. Half of skyrim were willing to turn against the empire for talos, so the thalmor have every right to flood skyrim to root it out, and try to provoke civil war 2. I suspect separation became completely necessary.

Can't wait to go back to Morrowind and restore the glory of the Dunmer. It's inevitable.
