ОтветитьJust beat the eggs with the sugar to the ribbon stage and cook everything on a double boiler checking frequently with a thermometer. IMO, that’s the best way to get temperature control.

ОтветитьIdk everytime ive made homemade whipped cream type ice cream it just dosnt taste like ice cream really in texture like at all. Its just you eating flavored whipped cream which isnt what im wanting in ice cream. Maybe the custard one is better not sure may have to try it someday
ОтветитьAll store bought ice creams I see are made out of skim milk. I'm shocked they are even in the same ball park. I question even buying ice cream anymore, for the last decade or less it seems extra fluffy. If there is a way to add extra air I bet stores did it.

ОтветитьI'm not sure but store bought chocolate ice cream that I've had taste like it's made with cocoa powder. After treating myself to dariette ice cream once a week for a whole summer, I no longer like store bought ice cream

ОтветитьI made the 3 ingredient one. For those who want to make it, i personally recommend using less sweetened condensed milk. I followed the recipe quantities exactly but halved except the sweetened condensed milk because as i was measuring it i thought it was waay too much. So instead of 7 oz (halved) i used 5 oz. It came out very very rich and and creamy, personally still a bit too much sweetened condensed milk for my taste but i think it'd be fine for most people. To be fair, I'm from the uk and I've noticed a lot of American dessert recipes are waaay sweeter than uk ones. Otherwise they came out really good! Creamiest ice cream I've ever had. I put them into popsicle moulds and they came out really nice.

ОтветитьI know I'm 7 years late with my comment, but damn you put a LOT of sugar in the custard based ice cream 😳 you put sugar in the milk, then beat up more sugar with the egg yolks and then added a lot of chocolate which is also 50% sugar. I get that ice cream has to be super sweet because your tongue won't taste the sugar as much when you're eating something frozen. But you should generally aim for 20% sugar in total. That was definitely way more than 20% lol
