I'm just a man with a plan, and that's to making interesting cooking stress-free. So here's my take on a Japanese streetfood classic, Okonomiyaki. It's so simple to make and really requires very few ingredients. For those of you who are avid Asian cuisine culinary masters you probably already have all these ingredients, and for those who aren't, go out and buy them! They will revolutionize your weekly food menus. Below is the recipe in the video to serve 2.

Okonomiyaki - makes 2
1 Sweetheart Cabbage
1 Bell Pepper
4 Spring Onions
100g Crispy Onions
100g Fresh Ginger, minced
50g Pickled Ginger, sliced
2 cloves Garlic, finely chopped
Batter-
150g Plain Flour
2 Eggs
150ml Water
2 TSP Table Salt
1 TSP Caster Sugar
1 TSP Baking Powder
1 TSP Sesame Seed Oil
Toppings-
Okonomiyaki Sauce - 2 TBSP Ketchup
1 TSP Worcestershire Sauce
2 TSP Oyster Sauce
1 TSP Caster Sugar
Kewpie Mayonnaise
Bonito Flakes / Katsuobushi
Nori (cut into strips)
Spring Onion (green ends sliced)
Pork Scratchings
1. Finely slice the sweetheart cabbage, bell peppers, and spring onions and put to one side.
2. Make the batter by placing the plain flour, salt, sugar, and baking powder into a large bowl, big enough to hold the batter and the cabbage mix.
3. Beat the 2 eggs and add them to the flour. Then gradually add the water ensuring you have no lumps and finish by mixing through the sesame seed oil.
4. Add all the chopped vegetables, gingers, garlic, and crisps onions to the batter and mix thoroughly.
Preheat a frying pan or teppanyaki griddle to medium-high heat and coat in a thin layer of cooking oil.
5. Take half of the okonomiyaki batter and ladle into the frying pan or teppanyaki griddle, aiming for a round shape about 2cm thick. Cook on one side for 5 minutes, until the bottom has a nice golden colour and the okonomiyaki holds shape, and then carefully flip.
6. Cook on the other side for a further 5 minutes, until both sides are golden. You can add a splash of water to the pan and cover to allow it to steam, ensuring the vegetables are cooked through. Then remove from the heat onto a plate. Repeat with the remaining batter.
7. Make the okonomiyaki sauce by mixing the ketchup, Worcestershire sauce, oyster sauce, and caster sugar together in a bowl. Place in a squeezy bottle if you have one.
8. Apply the toppings starting with the okonomiyaki sauce and then the kewpie, followed by the other ingredients.
