Achari chawal, also known as pickled rice, is a flavorful and tangy rice dish from Indian cuisine. It gets its name from the use of various pickling spices and ingredients. Here's a recipe for making achari chawal:

Ingredients:

For Pickling Masala:

2 tablespoons mustard seeds
1 tablespoon fenugreek seeds
1 tablespoon fennel seeds
1 tablespoon nigella seeds (kalonji)
1 tablespoon cumin seeds
1 tablespoon coriander seeds
4-5 dried red chilies (adjust to taste)
1/2 teaspoon asafoetida (hing)
1/4 cup mustard oil
2-3 cloves of garlic
1-inch piece of ginger
2-3 green chilies (adjust to taste)
Salt to taste
For Achari Chawal:

1 cup basmati rice (washed and soaked for 30 minutes)
2 cups water
2 tablespoons vegetable oil
1 bay leaf
1 cinnamon stick
2-3 green cardamom pods
4-5 cloves
1/2 cup chopped mixed vegetables (carrots, peas, beans)
1/2 cup chopped onions
1/4 cup yogurt
Salt to taste
Chopped fresh coriander leaves for garnish
Lemon wedges for serving
Instructions:

Prepare the Pickling Masala:
a. Dry roast mustard seeds, fenugreek seeds, fennel seeds, nigella seeds, cumin seeds, and coriander seeds in a pan until they become aromatic. Let them cool.
b. Grind the roasted seeds along with dried red chilies, asafoetida, garlic, ginger, green chilies, and salt into a coarse powder.
c. Heat the mustard oil until it starts smoking. Remove it from the heat and let it cool slightly.
d. Add the ground spice mixture to the hot oil and mix well. Allow the pickling masala to cool completely.

Cook the Rice:
a. In a large saucepan, heat 2 tablespoons of vegetable oil. Add bay leaf, cinnamon stick, green cardamom, and cloves. Sauté for a minute until they release their aroma.
b. Add the chopped onions and cook until they turn translucent.
c. Add the chopped mixed vegetables and sauté for a few minutes until they begin to soften.
d. Drain the soaked rice and add it to the pan. Stir-fry the rice for a couple of minutes.
e. Add 2 cups of water and salt. Bring it to a boil, then reduce the heat to low, cover, and simmer until the rice is cooked and the water is absorbed. Fluff the rice with a fork.

Make Achari Chawal:
a. Add the prepared pickling masala to the cooked rice and gently mix until the rice is well coated with the masala.
b. Add yogurt and stir to combine. Cook for a couple of minutes until the yogurt is well incorporated and the rice is heated through.
c. Garnish with chopped fresh coriander leaves.
d. Serve hot with lemon wedges on the side.
