ОтветитьI do not know what music you used... but sounds a lot like Raag Jhinjhoti from Indian Classical Music... I liked the video and the idea a lot.. but why do we add vinegar... do we need to make it sour... after the bacteria from the capsule is added... plus sugar... and organic material... isnt it enough for fermentation?
Ответить@Chrissy You really don't need to add apple cider vinegar. Yes, you can use any vinegar - or even plain white vinegar. Fermented vinegars (with the "mother" or live cultures) will have other bacterial and fungal species that will compete with the bacteria from the probiotic capsules. Vinegar is added to quickly drop the pH (i.e. make the fruit juice acidic) which will favour the growth of the bacterial species you intend, rather than bad, unwanted bacteria. You only need a small amount of vinegar, just one or two teaspoons. But you can still ferment without even adding any vinegar. In this case, use a 2% brine or salt solution, along with the sugar. However, brines are best used with veggie ferments rather than fruits, as the fermented juice will taste really salty! Personally, I add a pinch or two of salt, plus vinegar if I'm fermenting fruit.
By the way, it may be a good idea to sterilize not just the jar in which you culture, but the fruit you use, too. Boil the fruit first to kill off any unwanted bacteria and fungi living on the fruit. Let the boiled fruit cool, and then put into the jar with the water + vinegar and then add the bacterial spores from the probiotic capsules and the sugar (I'd use less sugar myself - half of what was used here).

ОтветитьI made sauerkraut by using probiotic capsule.But the liquid is auiet slimy, though the smell and texture is fine, I'm scared to taste it. Is the slimy texture because of the probiotics ? I have made sauerkraut before without using probiotic capsules and it's juice was quite watery,so I'm a little skeptical this time.

I'm wanting to grow a very specific probiotic strain, and I wonder if the yeast/bacteria on the surface of the fruit would compete with the probiotic. Ответитьthis is absurd. you said store bought probiotics are freeze dried so not activated....and yet you use a store bought probiotics to create your own culture. well, what do you think the vinegar and food acts like? it's the condition in your stomach. if your probiotics is active after being inoculated by the store bought version, than essentially popping it in your mouth directly does the same thing.

I tried this recipe. While it did make a strong probiotic drink, it also raised my blood sugar a lot as measured by my continuous glucose monitor. I tried to make it a couple of times letting it ferment longer each time to ferment more of the sugar until it had no sweet taste at all. It still raised my blood sugar a lot. Not good for diabetics or any kind of low carb diets.

ОтветитьSo you only grow Probiotics that also grow at 70 F which is what? Lactobacillus Acidophilus, Bifido Bacterium; Anything else. Obviously, you can not grow L. Rueteri or L. Gasseri. What about Spore Probiotics like B. Coangulans and B. Subtilis?

And skip the vinegar it just interrupts the fermentation, totally useless in this..
