Some Turks from Mongolia occupied it and forced its Greek inhabitants to convert to Islam in order not to slaughter them. There the Turks also learned a little about cooking and now they present what little they have learned as Turkish. Did they bring it from Mongolia? If they do a DNA test they will see that they too are Greeks.

You need to work on your “clarified butter”. Clarified butter is actually clear. Hours is cloudy. You have to cook the milk out of it and not save it for other uses.

Why sugar syrup rather than honey? Is this a regional thing?
Tried this recipe and it turned out perfect. However because of my Iranian heritage I made two changes to give it a more Iranian flavor. 1) added a tablespoon of rose water in the simple syrup and 2) added a tablespoon of ground cardamom to the chopped pistachio. You recipes are great, you explain things well and you make it all fun. ❤

ОтветитьThanks very much Rafika. I made them for the first time and they came out perfect. I just like to suggest because butter is expensive and should not be wasted, when you take the white stuff out, you can put them aside and then use it to brush the inside layers and use the most purified part on top. This way they wont get burnt, which is why you scoop them out.
Also I like to add, you and others like you do huge amount for politics than all the stupid politicians do. You show the beauty and positive side of other cultures and you do it very well. Do no underestimate what your good work is doing.
I just found your channel a few weeks ago and love all the dishes. I've made the hummus twice already, and the on the list is the kebob recipe.

I just saw this video And I heard you trying to pronounce Ghee. Its not Jee as in Jam its Ghee as in Great slightly with H sound Gh. For example k with h is Kh , similarly g with h is Gh. Lots of love from Belgium.

ОтветитьI've never been to the med, middle east, but close enough in Afghanistan, the baclava, or equivalent there did not taste like what I thought it would, too syrupy and crystalized, but the best postachios. Anyway the best baclava I've tasted was in Manila, made by two Lebanese brothers. I ordered a dozen to take on the plane with me when I left the country. So needless to say, I was obsessed with finding an equivalent baclava, but all came up short, either a gooey mess, or too syrupy, or a frozen concoction of sorts. I was looking for those light layers of fillo, swaddled in a fine film of butter, dotted with walnuts and pistachio, with a hint of rose water. A confection so light and crisp it elevates the soul when tasting a square. So I'm going to give your recipe a try, It really looks wonderful. BTW all my own baclava baking attempts have failed in what I was hoping to create. I'm a type 2 diabetic, so my own attemps always limited the sugar to half of what the recipe of the moment calls for. Thank you for this recipe. It just looks absolutely divine, as they say.
