Also, I think that the movies he wrote but didn’t direct(The Man With The Iron Fists and Aftershock) are pretty great! Here is my list(I’ll have a more detailed list at the first comment):

I've seen about half of Knock Knock on and off throughout the runtime, and I wasn't engaged.
I haven't seen The House With The Clock In Its Walls.
I've only seen Hostel one time, because I was left deflated by it. Cabin Fever was so freaking great with its superb mixture of quirky humor and body horror, which was lacking for me in his sophomore directorial outing. Alas, I didn't get around to watching Hostel 2.
I have zero nostalgia for the original Death Wish, and I haven't gone out of my way to avoid the remake, but I haven't seen it either.
Cabin Fever is utterly brilliant, and I personally have so much nostalgia for it. My group of friends in high school and I would watch this as a congregation on several occasions, including a post-prom party. I recently revisited it when I was home sick from work, and it still holds up all these years later.
I'm so utterly pleased as punch to say that after fifteen plus years of bated-breath anticipation, Eli Roth's Thanksgiving hits every single mark that I hoped against hope that it would! I've seen it three times in theaters already, and nothing is lost or lessened for me upon subsequent viewings. In my opinion, Thanksgiving is Eli Roth's best film since Cabin Fever, and it has the potential to surpass it for me. I'll probably give Hostel an updated revisit in the near future.
When I watched Thanksgiving I was the only person in the theatre which added to the creep factor 100%. So when HOSTEL came out I was 19 and dating this beautiful Spanish girl but her family didn’t really like me and my roommates couldn’t stand her so in order for us to spend time together we would go see like 2-3 movies per week. On a late Saturday night we’re staring at the marquee and decide to give this hostel movie a try, we new absolutely nothing about it at all, and when it starts it just seems like a frat teen coming of a age euro trip type movie in fact I think EUROTRIP came out the year before so I thought that’s what it was going to be . Holy Shit, was I wrong it just kept getting weirder and darker and more and more ominous and we were both really high and when it finally hits that tipping point and takes off its such a wild ride we were both like what the absolute F is going on here, and we were rooting for Paxton at the same time. I’ve had some really good movie experiences in my life I see like 10-20 per year, but I will never forget HOSTEL and how I felt and how scared and freaked out I was by it. Just an absolute awesome time and great memory in my life. Great channel and great content brother!
