Welcome home Wendy & Harry & Sally! Thank you for giving us some videos to watch while you were gone. Honestly I would have recommended removing the cupcakes from the silicone molds as soon as you took them out of the oven. I have found that when you leave them in the silicone the moisture that can come from them during the cooking phase can be retained within the silicone and give them a wet and all mushy texture especially the next day. I was soooo happy you took the bread out while it was still warm so that any steam/moisture can be released while it cools. It all looks delicious. Your flavour combinations are awesome but honestly I’ve found if I put flavour droplets into the dry ingredients no matter how much I think I’ve mixed it and thought it was completely mixed in without fail when we are eating the end result there will be a hard piece of egg white/bread and it’s not edible at all it’s hard and not very nice. That’s why I won’t give it to anyone else as a treat because it’s so off putting when you bite into something that is soft and then you bite down on a hard piece that quite frankly you can even bite it feels like a piece of a stone. Just wondered if anyone else had experienced this?

P.S. what is that nifty tool I watched you use to scrap down the inside of your blender in one of your videos? It had a long handle with something at the end and it looked like exactly what I need for the egg pudding also I made your version of the pudding just using egg whites I checked Maria’s recipe and it said 10 hard boiled eggs which included the yolks so my cousin used them and I made it like you with just egg whites (I have silicone egg things that I can fill up and put lids on and then boil them and then you have something that looks like a hard boiled egg without the yolks and mine didn’t smell nasty but when my cousin made it with the yolks she said it had a nasty smell her hubby called it fart pudding! Lol!!! Apparently once it was completely cold it didn’t smell as much. Also I used the black cocoa powder in my pudding and some English toffee and it’s AWESOME!! So definitely something to do with any leftover egg whites that you have I’m thinking you could probably just pour the egg whites into water and then heat it to boiling water and then just strain the water out would be easier then putting them in the little containers and lids. Something I’ll try.

Glad to see back safe and sound and hope you enjoy the rest of your vacation. You know every time I go on vacation I always need time to come home and recover from my vacation, crazy isn't it. I wish we could smell food. It looked wonderful and I am still trying to figure out something to make ahead because if I wait I will be left out again! That means no dessert for me because I ran out of time! I bought some keto cinnamon bread and keto Hawaiian sweet bread to try ( every now and then I try different breads to see how they taste) and I have to say they were pretty good .The Hawaiian sweet bread tasts sweeter when you put butter on it and the cinnamon bread needs more cinnamon
