ОтветитьWhy haven't any of these chefs used a "kitchen only" hair dryer for final drying of the meat? They all say that the meat MUST be dry for good searing. Even a small "travel dryer" would work. Keep it in a kitchen drawer.

ОтветитьI have made this so many times. It’s absolutely delicious! My husband says it is a bit tart/tangy. So the last time I added about a teaspoon of honey to combat that mustardy-ness and it went sweet but just more balanced out. It was even more amazing!

ОтветитьThe real key to frying chicken with skin is to have the pan hot. Like really hot. The high heat will cause a layer to form while not allowing the skin to adhere to the pan. If it's not hot enough the skin will bond with the metal and you will have a much harder time flipping it, with the skin sticking to the pan.

ОтветитьIn the recipe it says to add 1 tsp of whole grain mustard, but it looks like she actually added a lot MORE than that! She added a whole tablespoon of that here! So that’s what I did too.

ОтветитьI just made this incorrectly, and it's still delicious! I had no white wine, so I used a splash of red. I had no creme fresh, so I used skim milk (I know, I know...) and parmesan.
