Shah pilaf is an Azerbaijan food , it is very exited and delicious
Ingredients:
Three cups of rice or 500 g.
Lamb or beef boneless 800g
Carrots 2 pcs.
1 pack pita bread (preferably round and thin)
Butter 100g
100g vegetable oil
Raisin 100g
Chestnut or cashew 100g
Prunes 150g
Dried apricots 150g.
Saffron 2 pinches
Onion 2 pcs.
Garlic 2 pcs.
Salt 4 tsp (3 tsp. for cooking rice in water and 1 tsp. for ingredients)
Pepper 2 tsp.
Turmeric 1 tsp
Boil the meat and set aside.
Soak the rice and then cook in boiling water for about 8-10 minutes (rice is 90% done), then drain the water and set the rice aside.
Chop onions and fry in butter, add turmeric and chopped carrots, then add meat, chestnut or cashew, plum, dried apricots, raisins, salt, spices and saffron and fry everything. Take a pot, grease its bottom and body, and, if you like, coat it with infused saffron. Now put the pita bread in the pot as shown in the video, add saffron rice to the bottom of the pita bread, and then white rice, then the prepared ingredients. We put in the oven at 200 degrees for 65-75 minutes. Now take the pot out of the oven, remove the foil and place a large plate on top of the pot, carefully turn the pot over and all the rice will remain upside down in the plate. Garnish with nuts and dried fruits as desired. Enjoy! Bon appetit !
