I actually did a school project on invasive species recently and chose the apple snail, so although it's been 10 months, let me add some context.
The neurotoxin is not lethal, there's a reason GladOS in Portal specified "deadly neurotoxin". The neurotoxin, while lethal to mice, acts as an irritant to humans, so if you touch them, you'd just get incredibly itchy where you came into contact with the eggs. If you do find the eggs, do not dispose of them into the water, I'd say put the remains of the eggs into a trash bag and contact local wildlife services to inform them of the local invasive snails, and the fact you have the egg remains in a bag.
The Apple Snails are native to South American places, think Brazil and the amazon rainforest. If you live in areas of the South American continent and some southern parts of Mexico, you do not need to destroy apple snail eggs unless they're nearby to a rice field of some kind.
